Seems like a huge incision to make over a small stab wound from a knife but hey I'm no surgeon.

    well duh. They have to look where the knife went and make sure it did not damage anything inside before pulling it out. There is a major artery right near there for instance.

    The Surgeons were probably expecting a complete flush of the peritoneum due to perforated intesine..Lucky angle perforated fascia only.

    I used to be a medic. It's good the resisted the urge to pull the knife out. NEVER DO THAT. The knife is what's preventing a life threatening loss of blood. The all knives are serated in both directions. That was no butter knife. So doctors cut the knife out. Rather than pull it causing more tissue damage.
