So if our honey is made of clover pollen the honey bees pick up, then what are these bees doing. Are they making some type of faux honey off the rabbits meat which eats clovers too?

Honey bees may land on the fur, but they will not take any thing off or from the carcass. However in an ironic twist, the decomposed meat and bones will turn into compost and be over grown. In turn more clover will grow this, the bees will collect pollen and nectar pollinating the clover flowers.
